Carrot and Yogurt Dip

I have adapted this recipe to TM from Not Quite Nigella. 
It could be posted in Vegetarian or Salads or sauces.  I have posted it here as I have made it twice for Xmas parties. 
It is Gluten free and could be made dairy free if soy yogurt was used. 
This recipe is 1/2 the original recipe. 

Ingredients

1/2 teaspoon of Caraway seeds
1/4 teaspoon of Cumin powder or seeds
1 small clove of garlic
1 teaspoon of olive oil
130 g carrot, chopped
130 g thick yogurt, like Greek yogurt. 

Method

Drop garlic on to rotating blades, scrape down. 
Add Caraway seeds , cumin and olive oil. Cook 3 minutes,100, speed 1
Add carrot and chop until finely grated, NOT mash. 4 seconds speed 7. 
Cook, 6 minutes, 100, speed 1 reverse. Remove cup after3 minutes. 
Add yogurt and mix on reverse until incorporated. 
Store in fridge, up to 3 days.

Lemon Garlic Baked Ricotta

Nagi of RecipeTinEats sure develops some delicious recipes.  I don't like Baked Ricotta as it is often too bland.  This dish has  real Zing. I have converted the recipe to TMX and made 1/2 the original with a couple of small changes.
It is vegetarian, gluten and egg free.
Serves 4 to 6, although my DD declared it delicious and ate 1/2.
Set oven at 180 C

Ingredients

250g full fat fresh ricotta, could make your own in TMX.
1 Tablespoon cream
zest of 1/2 a large lemon
1 medium clove of garlic.
pinch of salt
good grind of pepper
1 Tablespoon of olive oil
Topping of choice, Antipasto, (as in Photo), tomato, red onion and parsley or chopped fresh herbs.

Instructions

Drop garlic and zest onto spinning blades at speed 7. Scrape down.
Add oil, cream, ricotta and salt and pepper. Mix at speed 7 for 10 seconds.
Scrape down and mix again , speed 7 for 10 seconds.
Scrape onto an oiled oven proof dish. smooth out.
Bake for 15 minutes in centre of oven.
Shift rack up to near grill and grill for 5 minutes to lightly brown the top.
Serve warm with topping and garlic bread.

Edamame and Ginger Dip.

Green Soya beans,  or Edamame are an unusual ingredient.  The beans are available , frozen at Chinese grocers.  They are well worth hunting down as this dip is most unusual. The original recipe was published on the Eatingwell. com site.  I have adapted it to the TMX.

240g frozen shelled Edamame,  simmered in salted water for 10 mins.
1/4  cup of water
2 tablespoons of salt reduced soy sauce
1 Tablespoon of minced fresh ginger, ( bottled OK)
1 Tablespoon rice vinegar
1 tablespoon Tahini
1 clove of garlic
salt and hot pepper sauce to taste.

Add cooked and drained beans,  plus everything else into TMX bowl and zap on speed 5 for 1 minute.
Scrape down.
Zap again at speed 7 for 30 seconds,  or until a smooth paste results.

Chill before serving.
Will keep for up to 5 days, refrigerated.

Note
If you were not told,  you might think this was Avacado.  Therefore it could have tomato and onion added and served with corn chips.

Spicy Red Capsicum Dip


The inspiration for this recipe comes from Vinaroo, a member of Forum Thermomix. What do you do to use the bit of ricotta left over after making the Lemon Ricotta cake.? This is a very good solution. You can make it as spicy as you like.

100g. Ricotta
1/2 red capsicum roasted and peeled
Juice of 1/2 lemon
1 dessertspoon of Macadamia paste, (or any other bland nut butter) Could make this from nuts in TMX , first.
Couple of shakes of Tabasco
1 clove garlic.

Place all in TMX bowl and zap, scrape down and zap again until of desired consistency.

Maggie's ( Beer)Artichoke, green olive and lemon dip.

Warning- this looks like green sludge, but is absolutely delicious.

1 cup of pitted green olives
2 tinned or bottled artichokes
1 tablespoon of preserved lemon. ( skin only)
1 tablespoon of salted capers, washed and well drained
1 cup of flat leaf parsley
1 clove of garlic
1 teaspoon mint

Place all in T.M bowl and turbo until roughly chopped.
Then add 1/4 cup oil and 1/4 to 1/2 cup of verjuice (to taste)
S and P to taste

Capsicum sauce with philly cream cheese

1 small tin Capsicum (125g)
1/4 cup vinegar
1/2 cup sugar

Place all into T.M bowl and cook on varoma reverse for approximately 10 mins. With cap out and until syrupy.
While still hot pour over a 250g tub of Philly ( or similar) cream cheese.

This provides a sweet / sour combination.
I've tried it with fresh capsicum but it isn't as good.
