Sour Dough Crumpets Cooked in Pie Machine




If you have one of those four hole Electric Pie Machine and plenty of Sour Dough starter, then this is an easy way to make crumpets.  The big advantage over using rings and fry pan,  is that there is less mess.   The disadvantage is that you have less control over getting even browning on both sides.   This is important if reheating crumpets in a toaster.  Not so important if reheating in a fry pan as you can turn them over until browned to your liking.

Ingredients
2 cups of active SD starter
1 teaspoon Carb soda
1 teaspoon of salt
2 teaspoons sugar
1 teaspoon of baking powder
Canola spray

Method
Pre heat Pie Machine
Spray with Canola oil
Place dry ingredients into a 4 cup container, stir
Tip in SD starter and stir,  lifting the dry ingredients into the starter.   It will start to foam and will fill the container
1/3 fill holes in Pie Machine
Cook for about 7 minutes, ( until brown on base and almost dry on top.
Turn over and cook the other side for a couple of minutes.
Cool on wire rack.

Notes
Cook plenty as they freeze very well.
Make sure Pie machine reheats between each batch.

Almond Pancakes with Peaches and Yoghurt

This recipe is adapted to TMX from"Maggie's Recipe for Life", Book.
I made some small changes to use what I had available.  For original recipe Page 80.

Very simple and very nice.

Ingredients

Into TMX bowl, place
110g Wholemeal or Spelt flour
1/2 teaspoon carb soda
1/2 teaspoon Baking powder
1 Tablespoon of caster sugar( I used Stevia Sweet)
30g of ground Almonds
50g of Pr0biotic yoghurt ( I used Kefir)
130 mls of  Almond milk ( i used Lactos free milk)

Mix, 10 seconds/ speed 4.
scrape down
mix 5 seconds/ speed 4

TO COOK AND SERVE
Heat non stick pan to moderate
Lightly brush butter over non stick pan
Place Tablespoon full into pan and cook until bubbles appear.
Turn and cook other side
Remove and keep warm.

Serve with grilled Peaches and Yoghurt and drizzle with honey if desired.

Notes
Freeze well and reheat in heated pan.
Nice with Clean Raspberry Jam and yoghurt
Kid friendly

Kefir Bircher Muesli

Love this as it is nice as is , but you can add extra fruit or / and seeds. I have added Chia seeds to the basic recipe for an extra Omega 3 kick. 
Ingredients
Rolled oats 100g
Kefir made with lo Fat milk, 250g
1 Apple,  quartered, cored, wash but leave skin on. 
Chia seeds, 14 g. 

Method
Place all in TMX bowl and mix 30 seconds, speed 4. 
Store in Fridge. 

Notes. 
This makes just under 2 cups, with 1 serve 1/2 a cup.
1/2 cup serve is approximately 235 calories. 
Store in fridge for up to 4 days.
Can sweeten, but I have not found this necessary.

Granola


This recipe is converted to the TMX from Dish magazine. Issue 38. All the chopping is done in the TMX, and the heating of the liquids also. The mix is them slowly roasted in a warm oven, before the dried Apricots and Cranberries are added. It makes 13 cups.
1 cup of Dried Apricots
1/2 cup of Cranberries.
1 cup of skin on Almonds
1 1/2 cups of dates
125g. Honey
65g. golden syrup or brown Sugar.
65g. oil
1/3 cup of Apple or Orange juice.
1 teaspoon each,ground cinnamon and ginger
1 teaspoon of vanilla extract.
5 cups of rolled oats.
3/4 cup of sunflower seeds
3/4 cup of pumpkin seeds
1/3 cup of wheat germ
1/2 cup of sesame seeds.
3/4 cup of shredded coconut

Preheat oven to 150 o C


Zap Apricots in TMX until chopped but not mashed. Set aside in dish with Cranberries.
Zap Almonds until slightly chopped. There will still be some whole nuts, this is OK.
Set aside in large bowl.
Zap dates until slightly chopped and add to Almonds.

Place all liquids and spices in TMX bowl and heat 5 mins./80 o/ speed 1 .
While this is heating, add to bowl with Almonds and dates, all the other ingredients EXCEPT the Apricots and cranberries.
When liquids and spices are warmed add to mix in large dish and fold over to coat mix.
Tip into 2 roasting trays and place in preheated oven for 20 to 30 mins. Turning mix over every 5 mins.Do not over heat/cook the mix as it will become crunchy as it cools.

I watched the coconut and when it started to brown slightly then it was cooked.

When cold stir through the Apricots and Cranberries.

Store in an air tight container.

Museli, no added fat or sugar



Museli


The basis for this recipe was from Woolworths Good Taste Magazine.

600g oats
1 1/2 cups of whole almonds ( I used roasted)
1 1/2 of dried apricots, chopped in the TMX
1 1/2 cups of sultanas
1 1/2 cups of dried apple, chopped in TMX
1 cup of sun flower seeds
Then I added
1 cup of coconut flour, could add coconut
1/2 cup of sesame seeds
1 cup macadamia nuts.

Heat oven to 170, and roast oats for about 30 mins. Turning every 10 mins.
Add macadamias to oats in last 10 mins
Cool and add everything,mix well.
Store in air tight container when cool

1 serve is 1/2 cup.
